Tomato Galette
Rustic free-form shortcrust with ricotta, colorful tomatoes and thyme.
Ingredients
4 servings
200 g flour
100 g butter
Alternative: margarine150 g ricotta
Alternative: cream cheese400 g heirloom tomatoes
thyme, salt, pepper
Preparation

Knead the flour, butter and salt into a dough, then chill.

Roll the dough out into a circle and spread with ricotta.

Top with tomato slices and fold in the edges.

Bake until golden brown.

Sprinkle with thyme.
