Vegetable Curry with Rice
Colorful curry with cauliflower, chickpeas and spinach in a spicy tomato-coconut sauce.
Ingredients
4 servings
250 g basmati rice
1/2 cauliflower
1 can chickpeas
200 ml coconut milk
Alternative: yogurt2 tbsp curry paste
100 g spinach
Preparation

Cook the rice according to the package instructions.

Cut the cauliflower into florets and sear.

Add the curry paste and deglaze with coconut milk.

Add the chickpeas and let simmer.

Fold in the spinach and serve with rice.
